Pumpkin curryThomas crossThomas cross11:04July 31st, 2018 Pumpkin curry Pumpkin curry Ingredients ½ pumpkin1 small onionOil1 piece of ginger (about the size of a clove of garlic)1 tablespoon curry powder 250 ml coconut milk 1 cup cooked red beans Preparation Remove the seeds from the pumpkin with a spoon, cut away the fruit base. Cut into cubes. Finely chop the onion and ginger, fry together in a little oil, sprinkle with curry powder, fry very briefly and pour on coconut milk. Add pumpkin, cook until soft. Towards the end of the cooking time, add the beans and finish cooking. Note A very tasty dish that you can combine well. Especially with a glass of white wine!
