Pumpkin curry

Ingredients ½ pumpkin1 small onionOil1 piece of ginger (about the size of a clove of garlic)1 tablespoon curry powder

250 ml coconut milk

1 cup cooked red beans

 

Preparation
  • Remove the seeds from the pumpkin with a spoon, cut away the fruit base. Cut into cubes.
  • Finely chop the onion and ginger, fry together in a little oil, sprinkle with curry powder, fry very briefly and pour on coconut milk.
  • Add pumpkin, cook until soft.
  • Towards the end of the cooking time, add the beans and finish cooking.
Note A very tasty dish that you can combine well.
Especially with a glass of white wine!
