"They come in almost all shapes and colors: timeless cylinders in beech, curved towers in checkerboard pattern, bright orange traffic look cone. We are talking about pepper mills. Thomas Kreuz has been designing and producing them in Vienna since the 1990s. In 2009, the trained goldsmith opened a small store on Westbahnstraße in Vienna's seventh district: the high walls are made of brick, and the colorful mills are lined up in glass display cases. These are now also available for ChiliMuscat and, for about two years now, also for coffee.

"The heart of the mills is the Grinding mill", explains 52-year-old Kreuz. This is produced in the back room of the store itself. All mills are handmade from wood and precious metal. Krez deliberately avoids plastic. "The mills have their price. But they are sustainable, timeless and practically indestructible," explains the designer. Every now and then, he says, old, broken mills are brought over. "Then I simply install a new grinder, and they work again," he says.

Cross himself? He is a declared pepper lover and practically always has pepper with him everywhere. For this purpose, he has specially designed a small "travel mill" the size of a matchbox. "You need good pepper for a good meal," he says with conviction. You can also buy it - along with the mills - in his store."

I hate my nutmeg grater! Every time I ratchet my fingers. That's over now, because I have "Polly Molly", a nutmeg grinder with Swiss grinder, curves like a babushka, in three natural woods to have - a hand caress. A beautifully designed manufactured product, made of walnut wood by Thomas Kreuz from Vienna, who specializes in spice mills with his workshop. They come in many designs: colorful, with a "white stag" motif, with monsters or "model brothel" - rather demure, I would say. Kreuz makes the grinder of his chili mill himself, a bestseller. In the video on the website, you can see him nimbly sketching technology and working on the machine. "WauWau" is the name of his brand, and a dog barks on the homepage.
No, it wasn't me who found "Polly," the tip came from actress Maren Kroymann, who discovered her when she visited Vienna. Thomas Kreuz says, "No, she's practically a regular customer." Because Polly Molly at 67 euros is also a great gift idea.

Many who have passed by Thomas Kreuz' Manufaktur on the corner of Westbahnstraße and Hermanngasse have probably assumed it was a gallery - that's how artistic the store's display looks. There's not a trace of boring spice mills; here, pepper is made with moderation and style.
No wonder: Kreuz originally graduated in applied arts, but his heart was already beating for pepper mills back then. It was a long way from the first mini-series with 30 pieces to the 2000 mills sold per year. But one that paid off. "The pepper mill is a fetish object," Kreuz explains.
The customers' wishes are correspondingly unusual: From a lighthouse to a 1.20 tall pepper mill to a mini pepper mill for the handbag - the size of a matchbox - everything is there.

Pear meets apple
The quality - Kreuz turns the mills himself and also makes the grinder himself - has its price: the mills cost up to 368 euros. "But these are special artist's editions," says Kreuz. For example, "The White Stag," loosely based on the legend from Styria: a mill made of beech wood and hand-painted with ink and brush by Viennese artist Stoyan Dobrev. The classic - phallic and made of local woods such as pear, plum or apple - is available from 75 euros.

Designer Thomas Kreuz was inspired by emergency vehicles, gave the pepper mill the shape of a fire extinguisher, painted it in signal red. A star-shaped handle made of Bakelite serves as the turning mechanism, the filling opening is located on the side and can be opened by a black Bakelite ball. We meet Thomas Kreuz in his house in Haugsdorf, Lower Austria, where he has set up his workshop, his studio, in the former barn and set up the lathe. Here he tinkers and tries things out, develops prototypes, produces small series and one-off pieces. He starts up the lathe for us and demonstrates how a stylish mill body is created from a blank with a great deal of skill and sensitivity.

"I have an idea or a client, then I make a model, change and tinker until the product fits. If a mill then works, I produce a small series, ten to fifteen pieces. If it's well received and sells well, I sometimes make minor changes and then it goes into series production," explains Thomas Kreuz. That means he draws the model in Autocad, sends it to a turning shop in Znojmo, where the wood is CNC milled or turned. "This computerized manufacturing is much more accurate than if I make a template and work on my lathe..." The master fishes the prototype of the chili mill from the workbench, explains the story of its creation:" It started with a piece of wood, then I experimented with the sheet metal, the punched holes were too big or too small, so I could turn, I mounted a simple machine handle. In the beginning it's all about function, there everything is very rudimentary, the form comes at the end." From the idea to the finished piece is often a long road. Take, for example, the pepper mill he designed and made for the city of Stuttgart. I made a prototype, then sent six or seven models until one was selected and the mill was ordered.

Thomas Kreuz is a trained goldsmith, later studied product design at the University of Applied Arts. He has been building mills since 1999, and the first one was made of porcelain. How did it come to be made of wood? "Porcelain production is very time-consuming, you need expensive kilns, you can't change shapes so easily. Wood is cheaper and much more indirect, you can change something quickly..." The counterpart to creative design is Swiss precision. The grinder for salt and pepper mills is manufactured by a small family business near Zurich. The special feature is that the grind can be adjusted on the underside of the mill, not on the head as with conventional ones, which inevitably leads to it being permanently adjusted by the rotary movement.

Change of location: WauWau is the El Dorado for pepper and chili aficionados. Mills in all colors, sizes and shapes, including true works of art that are created in cooperation with other creative people. Speaking of which, if you have a special piece of wood, a great idea or simply some money to spare, you can have your own mill created. This is how the latest highlight, a travel pepper mill - small, chic, functional - was created from a customer request. The next prank is in the pipeline, a combination of pepper and chili mill in pocket format. An extremely charming little fellow is the "Little Sailor". The body is turned from walnut, the head is milled from aluminum, the nose is a Bakelite ball, the earring is made of copper.
The torque is not only in the production, but also for the user entscheident: For example, the chili mill is loaded extremely sharp, two turns give very spicy...

Thomas Kreuz has taken up this refinement method for his "Pepper Mill Barrique made of oak wood". Some time ago, we presented a pepper mill from the factory of Viennese designer Thomas Kreuz, whose design language explicitly opposes the "emotionless aesthetics" of modernism - and whose objects therefore look particularly good in modernist kitchens. At least as striking is the quality of the grinder imported from Switzerland. Now the small company that produces it for Kreuz has pointed him to their equally finely engineered planing mill for nutmegs.

The nut is inserted into the round opening, where the linkage holds it in place. Turning the top ball of polished aluminum activates the cutting blade, and finely shaved nutmeg particles trickle down onto puree, pumpkin vegetables, or, especially now in autumn, onto the briefly roasted goose liver with apples. When it comes to pepper grinders, the chef of the world commonly swears by the French makes of Peugeot, which can be considered incomparably effective and worthy of the price. It is indeed a nice feeling to turn the Peugeot at the top and see a more than stately amount of pepper trickle out at the bottom.

However, the fact that the grind can only be changed by loosening the top lock - and that the part often falls to pieces as a result - is annoying. So it's all the more pleasing that an extremely attractive alternative to the Peugeot is now being manufactured in Vienna, of all places.

Even grain

Thomas Kreuz studied design at the Angewandte and specialized in sharp mills. After meticulous research, he discovered a tiny four-man operation near Zurich that mills grinders of truly sublime quality. There, the pepper trickles in quite astonishing quantities, in even grain size.

The grind is adjusted via a screw at the bottom, unlike the Peugeot, the Wauwau (yes!) should not resent it if you grind to the last grain. They come in many different shapes, made of all sorts of fine woods, all of which can be found on the web. But the hand-painted one on the left in the picture looks particularly good.
