The sharpness of the peppercorn is reduced again, it becomes milder, but more fruity than the classic black pepper. Compared to our other red pepper varieties(red pepper Cambodia and red Kampot pepper), this variety is a less spicy, but very aromatic - but overall milder than the Tellichery.
We recommend this red pondicherry mainly for seasoning, for example on a risotto Milanese (saffron risotto) it fits particularly well, I think (not only in color).
