Tagliatelle simple and good!

Anyone who has ever made pasta himself appreciates the work behind it. And the taste is not to be compared with conventional ready-made pasta!

The basic ingredients are simple - you do not need much: more, eggs and salt. But with the flour is already the dog buried...the pasta flour is of course a special flour, Tipo 00, according to Wikipedia this more is comparable with the flour type 405, but in my opinion there is still a difference. The best result, so as close as possible to the Italian recipe, you achieve but with an original flour Tipo 00, I think.

For 200g of flour we took 2 eggs, which were directly from the farmer (in our case they were eggs from the Winery Sailer from the Weinviertel) were from free-range chickens. The yolk color was very yellow and this then affected the pasta color. Pasta could also be dyed, for example green with spinach or red with tomato paste, lasgne leaves are also colored.

Seasoned with green pepper and nutmeg

We have the pasta additionally seasoned with freshly ground green organic pepper. Green not because of the color, but because green pepper is harvested unripe, then gently air-dried, and thus very mild in taste, but still with the typical pepper flavor. This gives the pasta dough the necessary zing!

Nutmeg also fits well in the pasta dough, I think. Since we have a few times with the Polly Molly nutmeg mill turned over. This gives a sweet nutty flavor.

All in all, it is a little work to first knead the dough properly by hand and then roll out as thin as possible. But it is worth it!
The noodles are then cooked relatively quickly, there is good in between times to taste whether they are already al dente, they should in no case cook too long in salted water, then they become slushy! I estimate 2-3 minutes, which is quite fast.
